Chipotle-Style No-Chick’n Salad Sandwich
INGREDIENTS

¾ – 1 cup HV mayo (https://youtu.be/SZmNC8-qCiA) OR (https://youtube.com/shorts/LfDz2NUXcS4)
¼ cup chopped red onion
1 celery stalk chopped
¼ tsp garlic granules
Optional:
½ tsp salt or to taste
Pepper to taste
For the Jackfruit:
2 cans young jackfruit, rinsed and soaked
¼ tsp oregano
¼ tsp cumin
½ tsp smoked paprika
¼ tsp chipotle seasoning
½ tsp garlic powder
¼ tsp onion powder
1 tbsp coconut aminos
INSTRUCTIONS
Drain, rinse, and soak the jackfruit overnight OR drain, rinse, and boil for 10 minutes. Add the jackfruit to a pan on medium-high heat.
Cook for 3-5 minutes, while adding small amounts of water to prevent sticking. Continue to cook and press the jackfruit to break up the pieces
Add ½ of the seasonings and coconut aminos and cook for 3-5 minutes.
Combine the remaining ingredients in a bowl. Chop the mushrooms and add them with the rest of the ingredients. Mix to combine. Add to an HV Bun with any toppings of choice. Enjoy!
