Creamy Basil & Bean Salad
Ingredients:
2 2/3 cups or 2 15 oz. cans chickpeas
1 1/3 cups or 1 15 oz. can black beans
1 small red onion, thinly sliced
½ red pepper, diced
½ pint cherry tomatoes, halved
Dressing:
½ cup hemp seeds
½ cup raw cashews, soaked for min. 2 hrs (nut free: use sunflower seeds)
½ cup water
4 oz fresh basil
1 lime, juiced
1 clove garlic
¼ tsp black pepper
1 medjool date
1 tbsp coconut aminos
Instructions:
Combine all the salad ingredients in a bowl.
Make the dressing by combining all the ingredients in a high speed blender. Blend until smooth.
Pour the dressing over the salad and mix to combine. Enjoy!
