No-Chick’n Salad Wrap
INGREDIENTS
MUSHROOMS
10 oz of fresh oyster mushrooms
1 tsp parsley
1/4 tsp thyme
1/4 tsp oregano
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp onion
1/4 tsp mustard
1.5 tbsp coconut aminos
2 HV Wraps (see my recipes)
½ cup HV mayo (see my recipes)
¼ chopped red onion
1 celery stalk chopped
½ tsp ground fennel
¼ tsp garlic granules
Optional:
1/2 tsp salt or to taste
Pepper to taste
Optional:
Salt to taste
INSTRUCTIONS
Add the full oyster mushroom to a pan on medium-high heat.
Cook and press using a heavy pan or burger press until water from the mushrooms begins to release. Continue to press flipping periodically until no more water is released.
Add ½ of the seasonings and coconut aminos and cook.
Combine the remaining ingredients (except for the wraps) in a bowl. Chop the mushrooms and add them with the rest of the ingredients. Mix to combine..
Add No-Chick’n to the wrap, top with any additional toppings of choice.
