Making Fish Tacos On The Jobsite

We just attempted to make to fish tacos on the jobsite using a wheelbarrow and a water heater drain pan.
First up, I made some tailgate tortillas in the bed of my pickup truck.
I used a piece of 10” round duct pipe to cut them out- it worked like a giant cookie cutter.
Once the tortillas were done, we battered the cod fish in corn meal and fried them till they were golden brown.
I sprinkled cayenne pepper on top for a little extra kick.
Next, we made some Sawzall slaw.
I cut up two heads of cabbage, added red onions, shishito peppers, and homemade dressing; then, I mixed it up with my 18 Volt cordless drill.
You can’t have tacos without guacamole, at least in my opinion. And check it out- I even planted an avocado tree.
I threw in some Yucateco, this stuff is crazy hot, and some lime juice.
Now it was time to build a taco. I started out with a healthy layer of guac, a pile of slaw topped with fish, a little lemon, and finally some homemade baja sauce.
These tacos were amazing, but they were definitely messy. Let us know what we should cook next on the jobsite. @hausplans
