RECIPES:
Cajun-Style Cornbread
INGREDIENTS
1 cup cornmeal
1/2 cup oat flour
1/2 cup almond flour
2 tsp baking powder
1/2 tsp baking soda
1 tbsp flax
1/2 tsp oregano
1/2 tsp thyme
1/4 tsp black pepper
1/4 tsp white pepper
3/4 tsp smoked paprika
1/2 tsp onion gran
1/2 tsp garlic gran
2 tbsp minced jalapeno
1/8 tsp cayenne for a mild version OR 1/4 tsp + for more heat
1 1/4 cup plant milk
1 tbsp ACV
1/2 cup apple sauce
Optional:
2 tbsp nutritional yeast
Note: I am salt-free, if you’re not, I suggest adding 3/4 tsp of salt or adjusting to your taste.
INSTRUCTIONS
Preheat oven to 400 F
Combine plant milk, vinegar, and applesauce in a bowl. Mix to combine and set aside.
In a separate bowl add all of the remaining dry ingredients and mix to combine. Add jalapeños and mix again.
Prepare an 8 inch pan with parchment paper.
Add the wet ingredients to the dry and mix just until combined.
Pour the batter in the pan.
Bake for 25-30 minutes or until firm to the touch.
White Bean Chili
INGREDIENTS
1 red pepper, diced
3 celery sticks, diced
2 carrots, diced
1 white or yellow onion, diced
3 cloves garlic
1 tsp garlic granules
1 tsp onion powder
1 jalapeno, diced finely
1 tbsp cumin powder
1.5 tsp oregano
1 tsp smoked paprika
2 tbsp coconut aminos
2 cups vegetable broth + 1/2 cup for sauteeing onions
2 2/3 cups ( 2 15 oz. cans) white beans of choice
1 1/3 cup (1 15 oz. can) navy beans ( blended with 1/3 cup water and 3 tbsp cashew butter)
1 lime
Note: I am salt-free, if you’re not, I suggest adding 2 tsp of salt or adjusting to your taste.
INSTRUCTIONS
Add 1/4 cup of broth to a pan on medium heat. Add onions and garlic. Cook for 3-5 minutes or until onions start softening. Add a little broth as necessary to prevent sticking .
Add jalapeño, seasonings, and coconut aminos and mix well to combine.
Add the vegetables and beans and mix again. Add remaining broth and mix. Simmer covered for 15-20 minutes or until veggies are tender.
Combine remaining navy beans, cashew butter, and water in a blender. Blend until smooth.
Add the cream mixture to the pot of chili and mix until combined. Add lime juice, mix, and serve!
