Roasted Garlic Cauliflower Mash- Vegan, Oil-Free

ROASTED GARLIC CAULIFLOWER MASH

1 medium head of cauliflower cut into florets
1/2 cup cashew cream (blend 1/4 cup soaked cashews and 1/2 cup water)
1 bulb of roasted garlic
2-4 tbsp chopped chives
3/4 1 tsp salt or to your taste
1/4 tsp ground black pepper

NOTE: For nut-free use coconut milk to replace the cashew cream

Steam cauliflower until just soft. Combine remaining ingredients, except for chives in a food processor and blend into a mash potato consistency.
