Healthy Vegan Peach Cobbler! Gluten Free, Refined Sugar Free and Oil Free!

If you love peach cobbler then you should definitely try this healthy vegan version. It’s made using no oil, no wheat, and no refined sugar!

Ingredients:

Peach Base:

15 small peaches approx. 6-7 cups, peeled and sliced into ¼-½ inch slices
1/4 cup date sugar
1 tsp lemon juice
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup water

Crust:

3/4 cup oat flour
3/4 cup almond flour
¼ cup date sugar
1 1/2 tsp baking powder
1 tsp cinnamon
Optional: 1/4 tsp salt or to taste
1/4 cup +2 tbsp nut butter
1 cup plant milk

Instructions

Preheat oven to 375 F.

Combine sliced peaches with remaining base ingredients and mix until combined and add mixture to a 9×13 inch pan. Bake for 10 minutes.

In a bowl, combine the flours, remaining date sugar, baking powder, cinnamon, and salt (if using).
In a blender combine the plant milk and nut butter and blend until smooth.

Add blended plant milk mixture to dry ingredients and mix to combine.

Spread an even layer of batter over the peaches.

Adjust the oven temperature to 350 F and bake for 30 minutes or until golden brown. Enjoy!
