Chili Cheese Fries

INGREDIENTS
For the fries:

4 red potatoes
1/4 tsp black pepper
Optional:
1 tsp salt or to taste

For the Chili:

1 cup HV Veggie Ground (see my recipes)
1 tsp chili powder
1/2 tsp cumin
2 tbsp date sugar
1/3 cup tomato paste
1/2 cup kidney beans

For the Cheese:

1 cup raw cashews (soaked min. 2 hours)
2 tbsp nutritional yeast
1/4 tsp pepper
1/4 tsp garlic granules
¼ tsp turmeric powder
¼ tsp paprika
1/2 cup water
½ tbsp lemon juice
Optional:
1/4 tsp salt

INSTRUCTIONS

For the fries:

Line a baking sheet with parchment paper.
Peel and cut potatoes into ½ to 1 inch thick wedges. Spread the potato wedges on the baking sheet. Do not overlap them. Bake at 400F for 35-40 minutes, flipping halfway.

Prepare the chili:

Combine all the ingredients for this chili in a saucepan on medium heat. Cook and stir for 5 mins.

Prepare the cheese sauce:

Combine all the cheese sauce ingredients in a high speed blender. Blend until smooth.

Put it together:

Add the french fries to a dish, top with chili and cheese sauce. Enjoy!
