Strawberry Baked Oats
2 cups oats (I purchase organic oats that are third party certified glysophate free.)
1 cup date paste
1 tsp cinnamon
1 ½ tsp vanilla
2 cups chopped strawberries
2 tbls ground flax
1 ¼ cups plant milk
¼ cup nut or seed butter
Pinch of salt
* For those with diabetic considerations or who want to limit their sugar intake, you should reduce the amount of dates.
Blend plant milk, date paste, vanilla, and nut/seed butter. In a bowl combine oats, ground flax,and cinnamon. Combine wet and dry ingredients. Mix in chopped strawberries. Pour into parchment lined 8-9 inch pan. Bake @375 for 30 minutes.
Optional:
Homemade Cream Cheese Dressing (omit if nut free)
3/4 cup raw cashews (soaked for min. 2 hours)
1/4 – 1/2 cup plant milk
2-3 pitted medjool dates
2 tsp lemon juice
Strawberry Coulis
Add frozen or fresh strawberries to a pot and simmer until strawberries breakdown and thicken (approx. 30 minutes) Blend until smooth.
