Butter Bean Golden Brownies
INGREDIENTS
1 1/4 cups OR 1 15-oz can of butter beans, rinsed and drained
1 cup rolled oats
½ cup date syrup
¼ cup cashew butter (nut-free use tahini)
2 teaspoon vanilla extract
½ teaspoon baking powder
½ teaspoon baking soda
½ cup chocolate chips + extra for over top before baking
INSTRUCTIONS
Preheat the oven to 350 F and line an 8×8 inch pan with parchment paper.
Add rolled oat to a food processor or blender and process into a flour.
Add the the butter beans, date syrup, cashew butter, and vanilla extract. Process until smooth and combined.
Add the baking powder and soda and pulse a few times to incorporate.
Fold in the chocolate chips. Pour the batter into the prepared pan and spread evenly. Add some extra chocolate chips over top.
Bake for 18-20 minutes. Cool in the pan for 15 minutes. Remove the golden bronies from the pan by lifting the edges of the parchment paper. Allow to cool before cutting. Enjoy!
