Simple Quinoa and Asparagus Salad
INGREDIENTS
1.5 cups cooked quinoa
½ lbs asparagus cut into 1 ½ inch pieces and steamed
½ red onion diced small
1 lemon juiced
2 tbsp fresh parsley chopped fine
1 clove garlic minced
1 pint of cherry tomatoes
Optional:
Salt to taste
Pepper to taste
½ cup raisins
INSTRUCTIONS
Combine cooked quinoa and the remaining ingredients in a bowl.
Mix to combine.
