Delicious Vegan No-Lobster Salad Bowl

No- Lobster Salad Bowl

For the bowl:

2 cups cooked quinoa
4 leaves of green lettuce, chopped
⅓ cup red cabbage, shredded
½ cup cherry tomatoes, halved
½ cup red bell pepper, sliced
HV Sweet Dijon Dressing (see my recipes)

Lobster salad:

2 15 oz. cans or jars of hearts of palm, cut in irregular ½-¾ inch pieces
1 stalk of celery chopped fine
2 tbsp chives, chopped
3 tbsp onion, chopped fine
1 tsp lemon juice
½ cup HV Mayo (see my recipes)
1 1/2 tsp Old Bay or other seafood seasoning (see my recipe below)
½ tsp garlic granules
¼ tsp smoked paprika
½ tsp ground nori or dulse flakes

Optional:
¼ tsp salt or to taste

HV “Old Bay- Style” Seasoning

1 tsp ground celery seed
½ tsp paprika
½ tsp dry mustard
⅛ tsp of mace OR nutmeg
¼ tsp cinnamon
¼ tsp allspice
⅛ tsp ginger

INSTRUCTIONS

Combine HV mayo, lemon juice, and seasonings and mix. Add chopped heart of palms, onion, chives, and celery. Mix to combine.

Put the bowl together by adding green leaf lettuce and top with cooked quinoa, sliced red peppers, shredded cabbage, sliced cherry tomatoes and lobster salad. Top with Sweet Dijon Dressing. Enjoy!
