Greens & Mango Salad W/ Blueberry Dressing

INGREDIENTS

For the Salad:

3 oz. mixed greens
1 cup of purple cabbage, shredded
½ cup chopped fresh cilantro
⅓ cup chopped green onions
¼ of a red pepper, sliced thinly
½ a mango, diced

For the dressing:

½ cup blueberries
¼ cup lemon juice
¼ cup water
2 pitted medjool dates
⅓ cup walnuts

INSTRUCTIONS

For the salad:
Combine all the chopped vegetables in a bowl.

For the dressing:

Combine all the ingredients in the blender. Blend until smooth. Add to salad. Enjoy!
