Healthy Vegan Baked Fries Oil Free

Zucchini Fries

2-3 zucchinis (cut in 1”x 2.5”)
1.5 cups almond bread crumbs (see my reels)
1/2 cup oat flour
2 tsp ground flax
1 cup plant milk

Combine the oat flour and ground flaxseeds and mix to combine. Add the plant milk and whisk into a batter. Batter will thicken as it sits, so add a little more plant milk as necessary.

Coat each zucchini in batter then bread crumbs. Place on a parchment-lined baking sheet. Bake at 350 for 15 mins flip and bake for another 10-15 minutes or until golden. Enjoy!
