Onion Rings
Ingredients:
1 yellow onion
1 red onion
½ cup oat flour
1 tbsp ground flax
1 cup plant-milk
Salt to taste

Instructions:
Preheat the oven to 425F.
Peel and cut your onions into 1/4 inch thick rounds. Separate the onion into pieces of 1 or 2 layers depending on how thick the onion layers are.
Prepare the breading batter by combining the oat flour, ground flax, and plant milk. Whisk to combine. Let sit for 10 minutes to thicken.
Pour HV breadcrumbs into a shallow dish with edges.
Bread your onions by dipping the rounds first into the batter. Make sure the pieces are well coated with batter. Then add the battered onion to the breadcrumbs. Using a spoon, toss the crumbs all over the onion ring until it’s well coated. Place on a parchment-lined baking sheet. Repeat this process for all the onion rings.
Cover the pan for the first 20 minutes of cooking time. Uncover and continue to bake for another 15 -20 minutes, or until the onions are cooked and the breading is crisp and deep golden in color. Enjoy fresh!
