High Protein Salad w/ Sriracha-Tahini Dressing

INGREDIENTS

For the salad:

3.5 oz. spinach
1 cup broccoli, chopped small
½ cup quinoa, cooked
½ cup lentils, cooked
1.5 oz. pea shoots
⅓ cup grated carrots
⅓ cup red pepper, chopped small
¼ cup red onions, chopped small
3 tbsp hemp seeds

For the dressing:

1/8 cup tahini
1/2 tbsp sriracha, date sweetened
1/2 tbsp dijon mustard
1/2 tbsp lemon juice
1/2 tsp smoked paprika
1/2 cup water
Optional:
Salt to taste

INSTRUCTIONS

For the salad:
Combine all the chopped vegetables, quinoa, lentils, and hemp seeds in a bowl.

For the dressing:

Combine all the ingredients in the blender. Blend until smooth. Add to salad. Enjoy!
