Triple Bean Salad
1 1/4 cups (1 15 oz. can) chickpeas
1 1/4 cups (1 15 oz. can) black beans
1 1/4 cups (1 15 oz. can) navy beans
⅓ cup cucumber, diced
⅓ cup red pepper, diced
¼ of a red onion, sliced thinly
1 cup chopped cilantro
½ cup sliced kalamata olives
Garlicky Dijon Dressing
1/2 cup walnuts
5 pitted medjool dates
4 tbsp apple cider vinegar
2 clove of garlic
1 tsp dried oregano
2 tbsp dijon mustard
1 cup water
Directions
Prepare the dressing
Combine all the dressing ingredients in a blender. Blend until smooth
Make the Salad:
Combine beans and chopped veggies in a bowl. Top with dressing and mix. Enjoy!
