Sweet and Sour No-Shrimp Bowl
4-8 oz Lions Mane Mushrooms
½ cup aquafaba
½ cup almond flour
1 tbsp ground flax
2 tbsp nutritional yeast
½ tsp salt
1 nori sheet
Sweet and Sour Sauce Recipe is in my SHORTS videos, in yesterday’s post.
Break Lions Mane mushroom into small shrimp size pieces and set aside.
Mix all dry ingredients in a bowl (except for nori) and mix.
In a food processor or grinder, process nori sheet into flakes. Add to dry ingredients and mix. Set aside mixture.
In a separate bowl pour the liquid from some drained chickpeas into a bowl and set aside.
Preheat oven to 400F
Line a baking sheet with parchment paper.
Begin breading Lions Mane pieces by first dipping them in aquafaba and then the dry mixture. Place on a parchment-lined baking sheet. Continue the process until all pieces are nicely breaded.
Bake for 30-40 minutes, (depending on size of pieces) flipping halfway through.
Cook your choice of millet or quinoa and add to a large bowl.
Toss breaded shrimp with sweet and sour sauce and add to your bowl, along with your favorite veggies. Add extra sweet and sour sauce.
Sprinkle with white and/or black sesame seeds. Enjoy!
