Sweet Potato & Black Bean Burger Vegan, Gluten, Oil-Free, Refined-Sugar-Free

INGREDIENTS

1 ½ pounds sweet potatoes (2 medium or 3 small)
1-1.5 cups cooked millet or quinoa
1 can black beans (drained and rinsed)
½ cup chopped red onion
⅓ cup chopped fresh cilantro
1 clove garlic, pressed or minced
2.5 tsp smoked paprika
2.5 tsp ground cumin
1 tsp garlic granules
Cayenne
2 tsp oregano
1 cup oats (organic and glyphosate free)
Optional:
½ tsp salt or to taste

INSTRUCTIONS

Pulse the rolled oats 5-6 times to make a slightly finer grain and set it aside.

In a bowl, roughly smash the sweet potato and add the remaining ingredients except for the oats. Mix to combine. Add the rolled oats and mix again.

Form into patties and place on a parchment lined baking sheet and bake at 350 F for 20 minutes, flip and cook for an additional 20 minutes.

Alternatively cook in a skillet on medium heat for 5-7 minutes on each side. Enjoy on an HV burger bun!
