Oyster Mushroom Skewers With Golden BBQ Sauce
Oyster Mushrooms:
1 lbs oyster mushrooms
1 tsp smoked paprika
1 tsp garlic granules
1 tbsp coconut aminos
1 tbsp sriracha
4 tbsp HV Mayo
Golden BBQ Sauce:
¾ cup yellow mustard
½ cup date syrup
1/4 cup apple cider vinegar
2 tbsp tomato paste
¼ cup coconut aminos
2 cloves garlic, crushed
1 tbsp date-sweetened sriracha
1 tsp smoked paprika
Pinch or more of cayenne
Optional:
½ teaspoon salt, or to taste
Instructions:
For the BBQ Sauce:
Combine all the ingredients in a saucepan. Simmer on low for 10 minutes. Allow to cool and transfer to a jar. Store in the fridge for up to 10 days
For the Skewers:
Tear oyster mushrooms into pieces.
Prepare the oyster mushrooms by combining the mayo, coconut aminos, sriracha, smoked paprika, and garlic granules and mix to combine.
Combine the oyster mushrooms with the seasoning mix. Put all the pieces of oyster mushrooms onto skewer sticks.
Add to a cast iron pan or grill on medium high heat. Brush with golden bbq sauce. Continue to cook and add bbq sauce as desired. Once the mushrooms are browned in some areas, they are ready. Enjoy!
