Egg Salad Sandwich Recipe

INGREDIENTS
½-¾ cup HV mayo ( https://youtu.be/SZmNC8-qCiA )
1 tbsp lemon juice ( if your not using HV mayo)
1 tsp mustard – yellow or dijon
¼ tsp black salt ( or to taste ) Also known as Kala Namak
⅛ tsp turmeric
2 tbsp red onion, minced
2 tbsp celery, minced
2 tbsp green onion, chopped
15-20 oz homemade pumfu or tofu (soft to firm, depending on the consistency you prefer)

INSTRUCTIONS

To a bowl add mayo, lemon juice if using, mustard, black salt, and turmeric and whisk to combine.

Add the chopped onions and celery and mix.

Crumble the pumfu/tofu into the bowl in a mix of large and smaller pieces. The softer your tofu the larger the pieces should be so that they don’t break up too small while mixing.

Use this recipe to make a sandwich or over a green salad. Enjoy!
