Chocolate-Chip Cookie Dough
1 1/3 cup (1 15 oz. can) cooked chickpeas
4 pitted medjool dates
½ cup almond flour (for nut free use oat or tiger nut flour)
2 tablespoons cashew butter (or other nut/seed butter)
1 tsp vanilla extract
1-2 tbsp of plant milk, as needed
¼ cup date sweetened chocolate chips
Directions:
Add chickpeas, dates, nut butter, and vanilla extract to the food processor and blend until almost smooth adding small amounts of plant milk as necessary. Add almond flour and blend into a cookie dough consistency. If the mixture is too wet add more almond flour, if too dry add more plant milk. Mix in chocolate chips. Enjoy!
