Raspberry-Blueberry Chia Pudding
For the raspberry layer:
1 cup frozen raspberries
1 cup plant milk
3 pitted medjool dates
½ tsp vanilla extract
6 tbsp chia seeds
For the blueberry layer:
1 ½ cups frozen blueberries
Directions
Prepare the Blueberry Layer:
Simmer blueberries on low until they thicken, about 10-15 minutes. Let cool.
Prepare the Raspberries Layer:
Add the frozen raspberries, plant milk, dates, and vanilla extract to a blender. Blend until smooth. Mix in the chia seeds. Let set in the fridge until you’re ready to assemble the cup.
Put it together:
Add a raspberry layer, then add blueberry layer, then more raspberry, then add more blueberry. Chill for 15 minutes. Enjoy!
