Blueberry Blondies
Wet:
¾ cup almond butter (or other nut/seed butter)
¾ cup date paste (check my reels)
⅓ cup sweet potato or pumpkin puree
1 tbls vanilla
1 flax egg (1 tbls ground flax+ 2 tbls water)
Dry:
4 tbls coconut flour
¾ cup almond flour
1 tsp baking soda
½ tsp cinnamon
1 cup fresh blueberries
* For those with diabetic considerations or who
want to limit their sugar intake, you should reduce the amount of dates, or enjoy very small portions as per your plant based doctor or dietitians recommendations.
Instructions:
Heat oven to 350F.
Line 8×8 inch pan with parchment paper.
In a bowl combine wet ingredients. Mix well.
Add dry ingredients and mix until just combined.
Fold in blueberries.
Add mixture to pan.
Bake for 20-25 minutes. Blondies are done when the edges are lightly golden and the center is set to the touch.
Allow to cool for 20 minutes before cutting.
