Broccoli Fritters
INGREDIENTS
1 lbs broccoli
1 tbsp Dijon
1 tsp ground flaxseed
½ cup mayo
1 tsp smoked paprika
1 tsp garlic granules
1/2 tsp onion granules
1/3 cup green onions
1/2 cup HV Almond Breadcrumbs (see my recipes)
Optional:
3/4 tsp salt or to taste
Brush with coconut aminos
INSTRUCTIONS:
In a food processor, pulse the broccoli into small pieces (like cauliflower rice) and set aside.
In a bowl, combine mayo, dijon, smoked paprika, garlic granules, onion granules, and optional salt. Mix to combine.
Add the pulsed broccoli and chopped green onions, and almond breadcrumbs, mix to combine. Form into 6 patties.
Heat a skillet on medium low. Cook the patties for 3-5 minutes or until lightly browned on each side. Enjoy!
