Buffalo No-Chicken Sandwich

Recipe:
Maitake or Oyster mushrooms
Almond Bread Crumbs (https://youtube.com/shorts/EjcrBCn6b-I?si=4No6Zc1SvNKNZ1Pj)
Aquafaba OR use mixture of 1 cup plant milk+ 1 tbsp ground flax
½ cup arrowroot
¼ cup oat flour (I use third party certified glyphosate free, organic oats)

Oil-free, sugar-free buffalo sauce. I don’t have a specific brand. I make my own and will be sharing the recipe in the future. 👌🏾

Combine arrowroot and oat flour in a bowl.
Dip mushroom pieces into aquafaba, then flour mixture,
back in the aquafaba then bread crumbs. Continue until all
pieces are nicely coated.
Add breaded pieces to the airfryer basket and air fry at
350F for 10-13 minutes or until golden brown.
Remove from the airfryer and brush lightly with oil-free, refined-sugar free buffalo sauce. Return to the airfryer for
an additional 5-7 minutes.
Remove from the airfryer, top with extra sauce if desired.
