High-Protein Lentil & Hempseed Crackers

INGREDIENTS:

3/4 cup dry brown or green lentils, soaked for minimum 6 hours
1/2 cup hemp hearts
1 1/2 cups water
½ tsp baking powder
¼ tsp baking soda
Optional:
1/2 to 3/4 teaspoon salt
1 1/2 tsp garlic granules
2 tsp thyme ( or your favorite dried herb of choice)

INSTRUCTIONS:

Preheat the oven to 350F

Add the soaked lentils, hemp hearts, garlic, thyme, and optional salt to a high speed blender. Blend until completely smooth. Add the baking soda and powder and blend momentarily just until incorporated.

Line a large baking sheet (approx. 18 X 12 inches). Pour the mixture into the center of the pan. Tilt pan in all directions to evenly spread the batter to cover the whole pan.

Bake for 20 minutes. Remove and cut into equal size squares.

Return the pan to the oven and bake for an additional 30-40 minutes. Baking time will vary depending on how thick your crackers are, add baking time at 5 minute intervals as necessary.

During the last 5-10 minutes of baking time you may need to remove some of the crackers around the edges of the pan as they may cook and darken faster than the ones in the middle of the pan.

Allow the crackers to cool and enjoy alone or with your favorite dip!
