No- Steak and Cheese

INGREDIENTS

2 HV hoagie rolls ( https://youtu.be/Z2EWRYhBQqM )
1 bell pepper
1 small onion
½ lbs Lions mane ( Portobellos will work though not as well as Lions Mane )
1/2 cup water
1/4 cup coconut aminos
2 tbsp miso paste
1/2 tbsp garlic granules
1/2 tbsp onion granules
1/2 tbsp black pepper
1/2 tbsp dried sage
1 tsp thyme

INSTRUCTIONS

Prepare the marinade by combining the water, coconut aminos, miso paste, garlic, onion, black pepper, sage, and thyme. Whisk to combine.

Add your lion’s mane mushroom to a cast iron pan or grill on medium heat. Reserve the marinade for later. Place another weighted pan or heavy press on top of the lion’s mane mushroom. As the mushroom begins to cook and release some water, press down on the weighted pan to encourage the lion’s mane to flatten and release more water. Once the lion’s mane is about 1 inch thick add it to the marinade. Allow the lion’s mane to marinate for a minimum of 30 minutes.

Return the marinated lion’s mane mushroom to the grill. Continue to cook it for 3-5 minutes or until browned on both sides. Remove the grilled lion’s mane from the grill and cut it into strips.

Add ⅓ cup of water to the grill on medium heat. Add the onions and peppers, saute until softened, using small amounts of water as needed to prevent sticking. Add the cut lion’s mane to the grill. Add half of the reserved marinade and continue to cook for 2-3 minutes. Add remaining marinade and saute for another 3-5 minutes.

Add the no-steak and veggies to a hoagie roll, top with cheese sauce. Enjoy!
