Pumpkin Pie Overnight Oats

INGREDIENTS

½ cup plant milk
½ cup pumpkin puree
1 cup rolled oats
4 tbsp date paste
½ tsp vanilla extract
¼ tsp cinnamon
⅛ tsp ginger
⅛ tsp turmeric
Pinch cloves
Pinch of black pepper
Pecans for topping

INSTRUCTIONS

Combine plant milk, pumpkin puree, and date paste in your cup or bowl, mix to combine. Add oats half at a time and mix. Add spices, mix to combine. Cover and refrigerate for a minimum of 2 hours. The longer they sit the thicker they will be.Top with chopped walnuts or pecans. Optionally drizzle with date paste.
